Self-Care Saturday is the perfect time to focus on replenishing both body and mind. Today, I’m thrilled to celebrate my latest addition to the kitchen—a brand-new air fryer! As Pilates teachers, we often encourage our clients to make mindful choices, and that includes nourishing ourselves with wholesome meals. Let’s explore the benefits of air fryers and dive into a delicious recipe: Air-Fried Broccoli, Brussels Sprouts, Sweet Potato, and Goat’s Cheese.


Why Air Fryers Are a Game-Changer

An air fryer is more than a trendy gadget—it’s a game-changer for healthy living. Here’s why:

Air-Fried Veggie Medley with Goat’s Cheese

This recipe is a perfect blend of hearty vegetables and creamy goat’s cheese, providing balanced nutrients to fuel your Pilates practice and teaching.

Ingredients

  • 1 small head of broccoli, chopped into florets

  • 200g Brussels sprouts, halved

  • 1 medium sweet potato, diced

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp salt

  • 50g soft goat’s cheese

  • A handful of chopped walnuts (optional)


Method

  1. Prepare the Vegetables: Toss the broccoli, Brussels sprouts, and sweet potato with olive oil, smoked paprika, garlic powder, and salt in a mixing bowl.

  2. Load the Air Fryer: Place the seasoned vegetables in the air fryer basket in a single layer to ensure even cooking. Cook in batches if needed.

  3. Set the Air Fryer: Set the air fryer to 190°C (375°F) and cook for 12-15 minutes, shaking the basket halfway through to ensure crispness.

  4. Add the Goat’s Cheese and Walnuts: Once the vegetables are golden and tender, transfer them to a serving dish. Crumble goat’s cheese over the warm veggies and sprinkle with walnuts if desired.

  5. Serve and Enjoy: Serve warm as a satisfying meal or side dish. Perfect for a healthy self-care treat!
